On Ikezukuri

I checked, and it is Australia that bans Ikezukuri and Germany only banned Ikezukuri of shrimps. Reasoning goes that because Ikezukuri is a cruel practice (in Australia) and unlike fish, shrimps can sense pain (in Germany).

More on Ikezukuri. It is a relatively new practice, probably after 12th century when religious constraints were relaxed. Before that, most fish were cooked using fire because fish rots quite quickly and because it was considered unethical to eat something that wasn't dead. It was commonly practiced at restaurants during Edo-period because it was the only way for those going to there to know that they are eating something fresh. After refrigetation became common in 20th century, it is mostly done for the show at a party to show that the host has done everything to make a great party. It is somewhat like showing around meats at a barbecue with guests saying "Wow, those steaks look wonderful!".

Only fish and shrimps taken from sea could be used because river fish can have nasty parasites that can cause quite serious pains. With few exceptions, those fish with whitish meat, usually tai (sea bream) are used for Ikezukuri because these fish look better when topped. Also, fish are sliced on a cutting board and then topped onto a plate to be served. Sharp cooking knives can easily ruin an expensive plate and there is no point in taking a risk. Natsumi Tsuji and Shinichiro Azuma

I think I put links to my sources in the edits I made on these articles, but people deleted all of it in their subsequent edits. You should be able to view them with the history tab, I think. Offhand, I was able to pull up an article on Shinichiro Azuma. The Kusogaki-domo o Kyūdan suru Homepage[2] has (had?) all these names on it, but it is always moving around.
